قبل 2500 عام 2,500 years ago

بدأت زراعة الزيتون في ليبيا منذ أكثر من 2,500 عام خلال العصر الفينيقي.
كانت ليبيا وتحديدا إقليم المدن الثلاثة ومنطقة ما قبل الصحراء أحد المراكز الهامة لإنتاج زيت الزيتون خلال فترة الإمبراطورية الرومانية.
زيت الزيتون كان يعد من المنتجات الاستراتيجية وتدخل استخداماته في العديد من مناحي الحياة كالغذاء والدواء والتجميل والانارة.
تتكون معصرة الزيت في العصر الروماني من ثلاثة عناصر رئيسية الأول حوض حجري وسطه حجر أسطواني والثاني الفرش الحجري الذي ترتكز حوله السلال فوقه مكبس مثبت وسط ذراع خشبية للضغط والعنصر الأخير هي الاحواض.
